In moderation, Bill, in moderation.

And yes, burrrp, it was deeeelicious. Surrounded by all my children, 'cept one (In the Army) and grandkids. Doesn't get any better than that.

Next year you might want to try my favorite.......
Czech/Slovak home made sausage "Hurka"
also know as a "rice sausage".

Cooked rice
pork liver
pork tongue
pork snoot
pork ears
other internal organs
season to taste.......
grind together, put in natural casing.
Bake in oven at 325F for 40 minutes
Fresh coffee and fresh Bohemian rye bread with plenty of butter.

"Happy Thanksgiving"

Gotta Love It!

How about some Boudin from Acadiana.

Red Boudin - pork blood

White Boudin - pork blood w/ rice.

I prefer andouille - all the pork parts you cannot serve on a plate, funny thing is now it one of the most expensive sasuages you can buy.

I tried several english sasuages, mostly cereal.

The best is fresh cracklin.
