Just what the pros look for, and the ribs telling you they are ready to be enjoyed. Looks like your rib pan did it's job of keeeping all the moisture in.

How are you picking up the smoke character, if at all? Uncovered for while? on the grate for a bit?

Bobby Flay hasn't a chance...

This was a "crash" ribs, walk in store,ribs on sale,look at watch, 3 hours till the kids get home. Hit the ribs with my rub, 2 hours in the oven at 250 and then finish for 1 hour in the smoker.

Thats funny... After seeing your pan and all of the talk about ribs, last night I went to a local place and actually ordered a rack to go. I bet $100 that yours are much much better though. :beer:

Looks like dog food.

My sister, the lawyer, is famous in these parts for once, a long time ago, making a jam dessert duck shaped cake. We just call it the duck. She didn't burn it and didn't ruin it other than by the ingredients she used. We didn't like it so we took the "duck" and popped it out the backdoor for the dogs. They came running over tails a wagging and sniffed then tasted the "duck". Their tails stopped wagging and they ran and hid in their dog house.

I ended having to pick the damn thing up and put it in the garbage.

Luckily it was cold out and it froze enough to not stick to the back porch.

A dead duck.

I just baked a rack of ribs yesterday and ate 'em all, the wife had a few. So goooood.

Slow cook, pork rub, a little tenderizer, no sauce (personal preference)

No pictures though, ate 'em too fast.

Gatdamnit Tom!!! Now I must fire up the grill tomorrow!!! I guess you a dry rib man huh? NC famous for the BBQ, but I never see people doing ribs too often, just minced meat BBQ. Looks good though!!!:coolman:
