Doubt it will affect your tune, but it WILL affect your coolant temp.

Running without a thermostat is a bad idea. When the weather is cold, your car will not get to operating temp. This will reduce your gas mileage, degrade your oil, and increase wear in general. When it really hot and you're on the highway, the car can overheat as the coolant doesn't stay in the block long enough to absorb heat, and then doesn't stay in the radiator long enough to give it off.

very bad idea
It's a bad idea for a couple of reasons.
#1 it will take a long time for the engine to get up to temp that means that you will harm your engine. The oil will stay colder and not lubricate as intended. It will also keep your engine in warm up enrichement mode using more gas and washing down the cyl walls of lubrication.
#2 the thermostat incorporates a by-pass block off which means that once you get up to temp you'll overheat as some of the coolant will go back into the engine not the radiator.

The computer runs the car and uses algorithms to control everything. Part of it is the warm up schedule and operating temps. Put the t-stat back in!
