Is it true that Mercury orginally called the Marauder concept car
the Dark Lord of the Sith, only they dropped this because of
fear it may piss off the Jedi?

Yeah, I remember reading a news release that said, "We at Ford respect our customers who have gone to the dark side of The Force. With that as our motivation we will name the new car the Marauder. We at Ford sincerely apologize to any Marauders or other nomadic pillaging peoples who may be offended by this. Please don't sue us."
