My understanding, it is an acronym for a popular adult beverage in South Haven:

South Haven Iced Tea.

At a time 30 years ago Rochester NY Institute of Technology was going to build a new campus in South Henrietta, and name it, South Henrietta Inst. of Tech., but decided against it due to the acronym being used on clothing, it was just named south campus instead.
